Creamy Spaghetti Pasta in White Sauce

This recipe is my personal favorite. I always do it ahead, store sauce in the freezer, and heat it up and just pour it in freshly cooked pasta and veggies. This is so easy to make and can be made in less than 10 mins, provided your sauce is ready. As an accompaniment to the pasta, I bake a garlic bread the previous day and make a side vegetable soup. You can use your choice of veggies in the pasta. We are fond of carrots, cauliflower, cottage cheese, capsicum and sweet corn and hence these get often added in the pasta.

List of Ingredients:

  1. 150 gm of Spaghetti sticks
  2. 1/2 cup all-purpose Flour (maida)
  3. 1/2 cup Butter, melted
  4. 3 cups Milk
  5. Half Onion
  6. 4-5 Cloves
  7. 2-3 Bay leaves
  8. Salt, Red chillies and Black pepper to taste
  9. 2-3 Garlic cloves
  10. Chopped Veggies – Carrot, Capsicum, Sweetcorn, Cottage cheese, Cauliflower etc.
  11. Olive Oil

Directions:

Start by cooking the pasta. Bring lots of salted water to a boil. Add in pasta and cook as per package directions. Drain the water and sprinkle olive oil over it. Put this aside

Meanwhile, prepare all the vegetables (chopping, boiling etc).

Now start preparing for the white sauce. Cut onion into half and stuff cloves in it.

Put milk in the pan. Add salt, bay leaves and cloves stuff onion in it and put it on medium flames for 10 mins.

Melt down butter in a pan. Add in all purpose flour and mix well. Stir for few mins till the raw smell leaves away. Be careful that the mixture should not get brown.

Now add both the preparation together and mix well. Keep stirring to avoid lumps formation. This is our white sauce. I usually prepare this in advance, and store in fridge in an air tight container.

Now lets start assembling our pasta. Put oil in a separate pan and add veggies, stir in oil for 5 mins.

Add three spoons of white sauce (depends on the preferred thickness of pasta) in the pan and stir continuously. Add black pepper, salt and red chillies while stirring.

Put it on the sim flame for 5 mins.

Serve it hot.

Swatcatz’s Notes:

  1. In case the sauce become too thick, add warm milk and stir continuously
  2. Remove cloved onion and bay leaves from the milk before mixing it with roasted maida in butter
  3. While roasting the all purpose flour, be careful that it should not turn brown.
